An Honest Review of FusionCore Japanese Eatery

December 1, 2023 by VancouverStudentEats

Located not too far from my home is this hidden gem FusionCore Japanese Eatery. This establishment is takeout only and not too many people know about it. It is a little hard to find since it is located in a plaza with limited parking. This restaurant itself is really small with just enough space for a cash register and a kitchen. There are no tables at this location but they receive a fair amount of UberEats and DoorDash orders.

Earlier this year, my girlfriend and I tried out this restaurant for the first time. For our order, we had a variety of different Nigiri, Uni, and Salmon Oshi. We had 15 pieces of different Nigiri which consisted of Salmon, Tuna, Ebi (prawn), Hokkigai (surf clam), Uni, Scallops, and a couple seared items. Our favourite item was the Uni Nigiri as this is a seafood item both me and my girlfriend enjoy.

Compared to a previous blog where I rated my top 5 Must Try Sushi Restaurants in Vancouver, it is a little on the pricier end. Personally, I would rate this restaurant a 7.5 out of 10. A lot of the items that we wanted to order were out of stock, and it was a little confusing on how to order in the store. In addition, the higher price point may have deducted from our experience since it was a takeout only establishment. For the amount of food that we got, it worked out to be around $90 after tip for my girlfriend and I. However, I was very impressed with the quality of ingredients and menu variety for this restaurant.

The nice thing about ordering takeout is that you can bring it home and have a relaxing night, or go to a scenic viewpoint and enjoy both the sunset and the food. Although it may not be a restaurant we would frequent, I’m glad we tried it. It is somewhere we would probably go again if we want fresh Uni.
